Busy Bees

We have been busy bees the past few weeks!! I made a major checklist of things to do before the little one arrives and we have been doing some major damage to check everything off. In the past week in a half we have bought a crib, dresser/changing table and a car we have moved all the furniture out of our office since it will now be the nursery and rearranged our guest room so it is now a guest room/office. I have washed all of the little ones clothes, blankets, burp cloths etc and bought all the little things that we were still missing. Besides putting the nursery together and decorating the room, the only real thing we have left to do is register at the hospital. Phew! What a good feeling it is to know we have little left to do but relax in the coming weeks. I am 35 weeks this week! I am still feeling great, I have tons of energy still, sleeping fine and still working out. Lets hope the next 5 weeks (give or take) stay just as pleasant. I will post pictures in a week or so once we sort the nursery out, I think it is going to turn out pretty cute.

I'll leave you with a delicious recipe. One of my first blog posts was about a cooking class that Justin and I took, and tonight we recreated the herb crusted pork escalope that we learned there. So delicious and super easy, the key is all the fresh herbs!

On a plate mix together a big handful of breadcrumbs (I usually make my own but we used a store bought brand tonight), a handful of freshly grated parmesan and freshly chopped rosemary, thyme, chervil and parsley. In a bowl mix together one egg and some milk. Take a boneless pork lion and slice into small pieces and pound into very thin strips. Salt and pepper the pork, dip in the egg mixture and then into the breadcrumbs so it is evenly covered and then cook in oil in a very hot pan. They shouldn't take more then a few minutes on each side, remove and let sit on a paper towel to drain excess oil. We served it with grilled asparagus and broccoli and we squeezed fresh lime juice from our lime tree over everything!

33 weeks

I am officially 33 weeks pregnant. Can you believe it? In the beginning of my pregnancy it felt like my due date was SO far away and now I can't believe we potentially have 7 weeks left. I am starting to get a little anxious, mostly because I feel like I have nothing ready. We haven't purchased any furniture for the nursery yet, which I do want to have done before the little man arrives. Besides clothes, the car seat and stroller I feel very unprepared! I know I still have time to do everything, but I just want to start ticking things off the list to start making me feel more settled.

We saw the doctor last week when we got back from London and the baby and I are doing well. I have gained 20 lbs so far! I know its all good weight, and my belly needs to be growing for baby Nicolson to be a nice healthy size, but it is never easy to look at the scale and not think holy cow when I see the pounds increasing! He already weighs 4 pounds also!! Such a big boy. My energy level is still very high and I have continued to work and workout which I think has been really beneficial for my body and not feeling too many aches and pains. I did start having braxton hicks contractions this week. My belly goes rock hard when they happen, which apparently also happens during labor contractions. They don't hurt at all, so I am hoping that my real labor contractions feel the same. A girl can dream, right?! According to my baby books this is my uterus practicing for the real deal. Speaking of the "real deal" I am also not so ready or excited for this whole labor thing. We had one of our 2nd to last prenatal classes on Saturday and halfway through the class after watching a cesarean video and learning about forceps and vacuums during birth, Justin leaned over and asked if we should reconsider this whole having a baby thing. Apparently he is nervous as well! The classes are very informative but always leave me wanting to stay pregnant forever and forget this whole birthing thing.

My favorite things so far about being pregnant are the fact that people are so kind, offering to take their taxi or trying to hold things for me and help me do anything. Taking naps almost daily without feel lazy. Feeling baby Nicolson move around is still so fun for me and makes me feel very connected with him, and of course the anticipation of finally meeting him. I can't wait to see what he looks like.
My least favorite things so far are the fact that my wedding and engagement ring no longer fit on my finger without it throbbing (oh the joys of swelling), with that said most my high heels are too tight as well even though I have jammed my feet into them on a few too many occasions. People starring at my belly (mostly women), and not fitting into normal clothes and wearing basically the same thing all the time!

Recap

Just a quick recap, mostly of photos, of the rest of our Christmas and New Years break. A few days after Christmas we took a 5 day road trip down through the south of England, driving through some of the thickest fog I have ever been in. It seemed to follow us everywhere we went. We passed by Stonehenge
and stayed in Dartmoor,Cornwalland eventually BathIt was a busy few days, but really fun and we got to be in some warmer weather which was nice! We arrived back to London on New Years Eve day. Justin and I went out to a local pub that night for the most low key and sober New Year's Eve we have ever spent together. Nonetheless, it was a nice evening with a romantic toast at midnight outside under heat lamps watching fireworks.New Years day we went and visited our friend Simon and Georgie and their amazingly cute son Freddie. And on the 2nd, Justin's parents spoiled us once again with a lunch at one of Gordon Ramsey's restaurants, York & Albany. We heading back home to Singapore on the 3rd, and have been recovering from jet lag ever since :)!
